Vermont Dining

Martin Luther King Weekend 1/18/08 through 1/21/08 Three nights lodging

Friday evening 1/18: welcome wine and cheese get together. Executive Chef Cassidy Warren will discuss the weekend's activities, and we will then enjoy a three course dinner in the Inn's romantic dining room with live piano music

Sat morning 1/19: Hands-on instruction from Cassidy. From 10 AM to 12 noon Cassidy will demonstrate the production of sauces and stocks from which he will then produce a number of soups and stews. He will then begin instruction on the methods of braising. We will then enjoy a luncheon of the soups and stews made during the morning session.

Sun morning 1/20: Cassidy will finish his demonstration of braising techniques and will then move on to instruction on popular dessert options involving the tempering of eggs such as custards, puddings, pot de creme, and Crème Brûlée. We will again enjoy the fruits of our labors at a festive luncheon.
